Where were you born? Colchester, England
Where are the places you have lived/ traveled? I grew up in Adelaide, then moved back to live in London in my mid 20’s. I returned to live in Adelaide, when my son was born. I have travelled quite a lot through Britain, Ireland, Europe, and Asia, and also spent one year doing a road trip around Australia. Travelling and Cooking are my passions.
When and why did you start cooking? I started cooking quite late really, in my early 20’s, when I realized it was a good way to make money to fund my travels.
What makes you passionate about cooking? The pure enjoyment of sharing food, cooked simply, when in season.
What is your favourite food / cuisine / style of cooking? I couldn’t honestly say. I love all food…I love French cooking for its complexity, but equally love Italian and Asian cuisines for their simplicity and freshness…. I love desserts, canapés, curries, laksa, chocolate, tapas, …
What is your signature dish or the best dish you have ever cooked? My husband thinks this would probably be my boned and rolled lemon and chorizo stuffed chicken. I think my chocolate torte is pretty good.
Who is the most important or exciting person you’ve ever cooked for? I was very fortunate in the UK, because I worked on a lot of television cookery shows, and worked with/cooked for many great chefs, cooks and celebrities – Gordon Ramsay, Rick Stein, Nigella Lawson, Robbie Williams, Metallica to name a few. But my personal favourite was Raymond Blanc – a true living legend.
Where is the most significant / exciting place you have ever cooked: Some of the most exciting places I have cooked include the Royal Albert Hall and the Barbican in London, and at some of the big festivals in England. The most significant occasion I have cooked for was my wedding.
What has been the highlight of your career so far: Cooking for the greats of the culinary world and teaching primary school children in the UK how to cook, using seasonal produce they had grown themselves.
Do you have any cooking related hopes & dreams? I would love to work with Heston Blumenthal (I have not as yet). I’d also like to work on more television cookery shows – they have it all – great produce, travel, excitement, different challenges every show, a seemingly endless budget, as well as the opportunity for creativity and learning.
